Mixed Romaine Lettuce

  1. Here's a great recipe for kale. We eat this almost once a week. Even my kids love it:

    KALE-FETA PASTA (Serves 6)

    1 onion, chopped
    3 cloves garlic, chopped
    2 tbsp. olive oil
    1 bunch kale, washed and chopped
    feta cheese, cubed (to taste)
    1 lb. shaped pasta (e.g., ziti, penne, farfalle)

    (1) Saute the onion and garlic in the olive oil until translucent.
    (2) Add the kale and saute until wilted.
    (3) In the meantime, prepare the pasta as you normally prepare pasta. Drain, but do not rinse.
    (4) Combine the hot, drained pasta and the hot kale/onion/garlic mixture in the pasta pot. Mix in the cold cubed feta to taste. The feta will melt from the heat of the other ingredients. Serve.

  2. Myrna Kasser: My favorite thing to do with rhubarb:

    Rhubarb & Strawberry Compote

    Yummy with ice cream. I’ve used dried orange peel in place of the strip; don’t bake it.

    2” strip orange peel
    2 lbs (10-12 slim stalks) rhubarb
    1 c sugar
    ½ c water
    5 cloves
    1 pint strawberries
    2 Tbl Grand Marnier

    1. Heat oven to 450o. Place the orange peel on aluminum foil. Bake for 10’, or until peel just begins to curl and turn brown around the edges.
    2. Trim leaves from rhubarb. If necessary, peel the rhubarb. Cut into 1” lengths.
    Put rhubarb into a heavy 1 ½ quart saucepan. Add sugar, water, orange peel, cloves. Cover tightly and bring to a gentle simmer.
    3. Cook about 8’ after it has begun to simmer. Stir gently after about 4’. Taste to see if more sugar is needed, but don’t use more than 1 ½ cups total. Add water cautiously, as the rhubarb will suddenly release its own liquid.
    4. Remove pan from heat.
    5. Hull the strawberries, and cut in half or quarters. Add them to the rhubarb. Keep the pot covered. When the compote is lukewarm, stir in the Grand Marnier. Chill thoroughly before serving.
